Cooking with the Kayes! This week on Meal Prep Monday we are working on an easy grain bowl Waldorf salad. This is quick and fast and can be done in 10 minutes if you have the chicken already cooked! We make a few chicken breasts during the week for a chop and go salad, wrap or just a quick snack. For the Waldorg Grain bowl the full recipe is below from www.geovita.ca
1 pkg (250 g) GEOVITA Wheat, Barley & Oat Blend 1 1/2 cups (375 mL) sodium-reduced chicken or vegetable broth 2 cups (500 mL) cubed, cooked chicken breast 1 each small apple and celery stalk, chopped 1/2 cup (125 mL) each halved grapes and walnut or pecan halves 1 cup (250 mL) broccoli sprouts or pea shoots (optional) Honey-Yogurt Dressing 1/4 cup (60 mL) each plain yogurt and mayonnaise 2 tbsp (30 mL) lemon juice 1 tbsp (15 mL) each honey and Dijon mustard DIRECTIONS Bring broth to a boil in a medium saucepan set over high heat. Add Geovita blend, reduce heat to low and stir. Cook, covered, for 10 minutes or until broth is absorbed. Spread grains out on a plate to cool slightly. Divide grains between 4 serving bowls. Arrange an equal portion of chicken, apple, celery, grapes and walnuts over grains. Garnish with sprouts (if using). Honey-Yogurt Dressing: Blend yogurt with mayonnaise, lemon juice, honey and mustard until well-combined. Drizzle over grain bowls to serve. Tip: Use fat free Greek yogurt and light mayonnaise in the dressing to reduce total fat and calories. Per serving (1/4 recipe): 550 calories, 18 g fat, 2.5 g saturated fat, 65 mg cholesterol, 61 g carbohydrates, 8 g fibre, 13 g sugars, 34 g protein, 430 mg sodium
